The original designs for some mobs, changed for various reasons, some examples include; Not being cute enough (Tardigrade*), Not looking Minecrafty enough(Bumblebee) not scary enough (Stalker), too scary (Hollowed), or they wanted to change it's functionality (illager beast).
*although I think the tardigrade is adorable too.
